Ingredients of Naan khatai

  1. It's 1 cup of Icing sugar.
  2. Prepare 1 cup of ghee.
  3. Prepare 1 cup of all purpose flour.
  4. Prepare 1/4 cup of gram flour.
  5. Prepare 2 tsp of baking powder 2 tbs samolina.
  6. You need 1 tsp of cardamon powder.
  7. It's 8-10 of almonds (roasted).
  8. Prepare of Egg yolk (as required).

In its authentic recipe, ghee, maida, rava (sooji), gram flour (besan) and sugar are used but nowadays it is generally prepared without using gram flour and rava. The word Nankhatai is derived from Persian word Naan meaning bread and "Khatai" from a Dari Persian word meaning Biscuit. In Afghanistan and Northeast Iran, these biscuits are called Kulcha-e-Khataye. Kulcha is a type of Indian bread similar to Naan.

Naan khatai step by step

  1. Icing sugar and ghee whisk well until fluffy.
  2. Set a side.
  3. All purpose flour, gram flour, baking powder, sooji strain them and cardamon powder mix well.
  4. Ghee and sugar mixture mix well all of them.
  5. Knead to form soft dough.
  6. Mix almonds (optional) mix well.
  7. Cover and refrigerate 15 mins.
  8. Makes 10-12.
  9. Put in butter paper tin.
  10. Brush with egg yolk and put on almond.
  11. Bake in oven at 180°c 15-20 mins.
